Glass-ceramic stovetops

Glass-ceramic surfaces are built to handle heavy cookware sitting and cooking on them — that’s true of cast iron, enameled Dutch ovens, stockpots full of water, all of it. What actually damages the glass is sliding a rough-bottomed pan across it, which can leave fine scratches over time, or a hard, sharp impact, like dropping the pan from height onto the edge of the burner.

The rule that matters: lift the pan to move it, don’t drag it. That alone eliminates almost the entire risk.

Induction stovetops

Induction needs a magnetic pan base to work at all, and cast iron is naturally magnetic — so it works directly, no adapter disc or special pan required. If a magnet sticks to the bottom of your skillet, which it will, it’ll work on induction.

Practical tips for either surface

What about heat distribution?

Cast iron’s slow, even heating works fine with the more localized heat of a glass or induction burner — it takes a little longer to fully heat through than on gas, but performs the same once it’s up to temperature. It’s a non-issue in practice.
