Different jobs, different lifespans. Most kitchens end up using both.
The core trade-off
Nonstick coatings release food effortlessly from the first use but wear out — most have a real lifespan of a few years before they need replacing. Cast iron takes longer to become genuinely nonstick and needs upkeep, but the surface improves with age instead of degrading, and there’s no coating to eventually fail.

Where nonstick still wins
Delicate foods that need a gentle, guaranteed release — omelets, crepes, fish fillets — are genuinely easier in nonstick, especially for a less experienced cook. There’s less technique required to avoid sticking.
Where cast iron wins
Anything that wants real heat: a hard sear, a pan that finishes in the oven, cornbread with a crisp crust. It also simply lasts far longer, which matters if replacing pans every few years isn’t appealing.
Most well-equipped kitchens keep both. Nonstick for eggs and delicate fish, cast iron for searing, baking, and anything that benefits from real heat retention. Neither fully replaces the other.
